Both are strong breeds, but I can’t help but wonder why you are inquiring (sorry but I am an animal rescuer who is far too familiar with people wanting the "toughest kind of dog" for a status symbol).
Can’t say this is the case for all dogs in the breed, but see this video for an idea (hint: the pit bull comes in last place in bite force but no domestic breed parallels wolves or wild dogs).
It must also be noted that these are *highly and professionally trained dogs.* Guard dogs should *only* be trained by professionals, otherwise it is dangerous for all parties involved (as well as the general public).

Well for a start you cannot compare two different dogs from two different category of dog breeds.
Rottweilers are of the Mastiff breed and Amstaffs were bred from bulldogs X rat terriers.
It is as stupid as asking who would win in a tug of war between a chihuahua and a poodle? Who knows and who cares?
