He is taken on daily 3-5 miles walks each day ….
I have started cooking chicken and rice with raw carrots for him but I dont know how much of each he should be having daily (supposed hes fed twice a day)

I know you are cooking the foods for him, but this should give you an idea of how much, and how wide a variety you need to make for him. Though chicken and rice with carrots is nice, it is not a complete diet. He is not getting all the vitamins, minerals he needs. You are short changing this dog when it comes to his diet, even though I know you are wanting to do right by him, simply because you are seeking an alternative to the dry dog foods out there.
He should be fed at least twice a day. And, I think this website should be able to help you.

2.5 cups in the morning, 2.5 cups at night
work your way down with age
half cup snack if needed
don’t feed rice to a puppy, keep it kibble and use chicken as a treat on top of it. rice dosent have the supporting nutrients for a young dog
